Kagoshima, the seside city, is Japan's premier stockbreeding prefectures and number-one wagyu producer in volume.  It is known as Japan's Texas and more than 20% of Wagyu are imported from Kagoshima.  The well-balanced marbling and tenderness is testament to the great care taken to raise these cattle.  As the meat cooks, the intramuscular fats (marbling) melts and infuses the meat with a rich and nutty flavor while keeping the meat tender and moist.
